Hello so I've always loved getting new recipes to try out and since my last post on healthy eating to lose weight got a fair amount of responses I decided to make a little corner in the general discussion for healthy( or as healthy as it can be so a favorite dish that isn't so healthy can also be posted since small indulgences are good once in a while.) recipe sharing!! Maybe if it gets a lot of review i coud arrange to make an ordered document but that's for later : D<br><br>Here it goes for my first recipe it's fast and easy to make:<br><br>So while I was volunteering in the cancer section of a hospital in my city I found this recipe book with great recipes and fount this one. I wanted to try something a little different something i never had: a warm salad. Blanching the green beans helps them retain their bright green color and crunchiness. The sweetness of the grape tomatoes and sauteed onion and garlic really offsets the tangy lemon juice in the dressing, so after having it I loved it and eat it in the sumertime : )<br><br><br><br><span style="font-weight:bold"><span style="color:#FF0000">Ingredients: </span></span><br> ◦1/2 tablespoon butter ( you can replace for Oil since it is to cook the onion,garlic & tomatoes, I use the butter since i don't eat it a lot)<br> ◦1 pint grape tomatoes, halved( I'll put some extra if I want more since there are great with the green beans)<br> ◦1 lb green beans, trimmed and blanched<br> ◦1 small onion, diced<br> ◦1 clove garlic, minced<br> ◦Goat cheese crumbles( I also use Feta cheese if i don't have goat cheese, both are really good; Feta being my favorite to put on it)<br><br><span style="font-weight:bold"> ◦<span style="color:#FF0000">Dressing:</span> </span><br> ◦3 tablespoons olive oil<br> ◦1 tablespoon apple cider vinegar<br> ◦1 tablespoon lemon juice<br> ◦1/2 teaspoon oregano<br> ◦Salt and pepper to taste<br> <br><br><span style="font-weight:bold"><span style="color:#FF0000">Preparation:</span> </span><br>Blanch the green beans and set them aside to cool. Mix together dressing ingredients and set aside.<br> <br>Heat butter over medium-high heat and add tomatoes, onion and garlic. Saute until tomatoes soften and onions become translucent. Remove from heat and let cool slightly.<br> <br>Combine green beans and tomato mixture and toss gently with the dressing. Top with goat cheese crumbles and fresh cracked black pepper.<br> <br>Makes 4 to 6 servings<br><br><br>Hope someone else enjoys and i'm looking foreward to the other recipes I can try!
