Desserts and Treats

I've got a strange craving to bake, or at least make desserts, lately. I tried making a chocolate pudding pie with graham crackers crust, but I screwed that up, because I used soy milk, which apparently has no natural thickening properties. After that I made apple chunk oatmeal cookies. Oh, they were amazingly tasty, but super soft. I like my oatmeal cookies to be chewy. Mine were almost as soft as a muffin or cake in my opinion. Either the extra moisture from the apples messed them up, or it was the quick cooking oats. I'll have to work on the recipe some other time.<br><br> On Tuesday I'm attempting peanut butter cookies as a gift for my grandmother's birthday on Wednesday. There are SO many different recipes for these cookies that it's stressful to try to pick which one I am going to use. I have an old Splenda cookbook that has a decent sounding recipe in it though. I hope I don't screw these up, especially since I'm making them the night before.<br><br> If I'm successful with my peanut butter cookies, then I think I want to try banana blueberry bread, or maybe peanut butter oatmeal cookies. Lol, both contain some of my favorite things; bananas, blueberries, peanut butter, and oatmeal!<br><br> What's your favorite dessert? Any recipe recommendations?<br> Also, anyone ever make their own pizza? Do you have a good dough recipe that isn't too insanely unhealthy? I hate that my brother eats so much unhealthy frozen pizza, so I'd love to learn to make him homemade pizza.

  • My family is always making homemade pizza's and pizza crust. They are always experimenting in the kitchen. As far as I know instead of using White flour use Whole-Wheat and I believe just some yeast. IDK. Hope it helps.
  • Oh my goodness... I have to post my favorite recipe! It's super SUPER simple to make, but it's really sweet and kind of a diet breaker.<br><br>Ingredients:<br><br>2 egg whites<br>1 tsp Vanilla<br>1 cup of sugar<br>1/2 cup of chocolate chips<br><br>Directions:<br><br>Preheat oven to 250.<br>Beat egg whites until stiff<br>Gradually add Sugar and Vanilla<br>Fold in chocolate chips<br>Place drops of mix onto an UNgreased cookie sheet<br>Bake for 30 minutes.<br><br>1 batch makes approx. 24 little cookie puff things. <br><br>They are AWESOME

I've never had meringue though, and I worry it's very sweet, since it's mostly sugar. How sweet would you rate it on a scale of 1 to 10? I might get to try some meringue on Tuesday, since we are going to a nice restaurant that serves pies topped with it, and my mother seems to be highly interested in the lemon meringue pie(I can steal a bite >:D). Nonetheless, since the recipe is simple(I probably have all the ingredients already in the pantry) I'll definitely put it on the list to try.   • On a scale from 1 to 10 I would say a 7 or 8. I've definitely had sweeter than these things!

I'm really sensitive to sweet things, especially chocolate(which I might be allergic to).<br> I want to make stuff for my family on Valentine's Day, and now that I think about it, these would probably be one of the best options, since they are comparatively "lighter" than a cake. I think cake + homemade pizza would just be too much for one day.<br><br>Last night I was also looking through my Splenda cookbook and saw recipe to like yours, but it's probably a lot lower in calories and fat, which means you wouldn't have to break your diet too much. Of course, I wouldn't recommend this is you've got a sensitivity to Splenda, or don't like the taste of sugar substitutes.<br><br> I've not tried it, but here it is in case you want to try it:<br> Chocolate Chip Meringue Cookies<br> Ingredients:<br> 3 egg whites<br> 1/4 teaspoon cream of tarter<br> 1/2 cup Splenda Sugar Blend for Baking<br> 1 tablespoon cornstarch<br> 6 tablespoons mini chocolate chips.<br><br> Directions:<br> 1. Preheat oven to 225 degrees fahrenheit. <br> 2. Spray cookie sheets or parchment paper with non-stick spray.<br> 3. In a large bowl, using an electric mixer on high, beat egg whites until foamy.     <br><br> Which one does she have? I have Marlene Koch's "Sensational Splenda Recipes: Over 375 Recipes Low in Sugar, Fat, and Calories." My mother bought it years ago, but never really used it, because apparently Splenda use to taste really bad. Now, I don't know if that was true, or if she was just skeptical back then, but now she doesn't have a problem with it in moderation.

  • I'm really not sure, but I'm not a fan of Splenda myself if I'm using it in teas or coffees. But when she uses it in the desserts Mmm mmm mmm! They are good!

    <br> Same here. Thus far I only use it in baking treats. I try to keep my sugar intake(artificial and natural) as low as possible.<br><br> Here are some of my cookies on a dish. I bought a cute basket that half the batch will go in for my grandmother. The last peanut butter cookie I had was years ago, and it was crunchy like a biscuit, so for the longest time I didn't even want to try them again, but my love of PB tempted me to try these. I must say, these also go great with milk(silk for me), and to my surprise they are better at room temperature than warmed up(I'm normally a warm cookie kind of gal).

  • Awhile ago I attempted to make snickerdoodles, since I got some fancy cinnamon, but they didn't come out perfectly, because I didn't have the <span style="font-style:italic">specific </span>ingredients(I used recommended substitutes). I mean, they were good, but not really a snickerdoodle. I called them mini cinnamon cakes. I'll have to find a better recipe, and make sure I have everything this time.<br><br>On Valentine's day I made apple crisp. It came out perfectly. I loved it, but it was very sweet! Overly sweet things can make me feel a little sick, but warm cinnamon apples were worth a very mild tummy ache. My mother and brother devoured it.<br><br>Tonight I'm making another batch of peanut butter cookies for a friend who is visiting on Friday, but I'm going to experiment by turning some into PB&J thumbprint cookies, adding peanut chunks to a few, and adding chocolate chips to a few. I'll probably leave half the batch(at least 1/4) as normal ones, since I know they taste good. I can't wait to enjoy some fresh cookies and silk while watching the new season of Survivor tonight! Woo!
