I DO I DO!!! In my opinion I would make a new layer and put the layer to be coloured in the top layer and desaturate the bottom layer. I haven't tried it but it may work

or make a duplicate of the first layer, desaturate it then take the history brush and paint where you want it to be normal. thats what it looks like to me.

Yep, you duplicate, turn the top one black&white, and erase everything you don't want to be black&white
